This is my very first attempt at a Blog - I have yet to find out how to do this and also how to post pictures but hopefully I will be able to figure it out.
Tonight I made a very quick Tagine (?) Big jewels of red, yellow and green peppers, half chopped red onions, a couple of carrots, some rough chopped vine tomatoes, some button mushrooms left whole, one bulb of garlic with the skin left on... roasted in the Rayburn with some olive oil, seasalt and cumin/coriander and tomato paste - rough chopped coriander leaves on top.
I cooked and mashed up a big pan of Rooster potatoes with some butter and white pepper and we grated cheese on top.
Verdict: Kids asked for seconds. I thought it was a definite success and shall add it to my (tiny) culinary repetoire. Cheers.
